Root Beer Vanilla Float Cake

My dad loves root beer floats, so for his birthday I made a Root Beer & Vanilla Float Cake!


Cake Ingredients;
1 box - Betty Crocker Golden Vanilla cake mix with pudding in the mix.
1-1/4 cups - water
1/3 cup - vegetable oil
3 - eggs

Frosting Ingredients
3 ounces - sweet cream butter, softened at room temperature for about 30 minutes
6 ounces - cream cheese, softened at room temperature for about 30 minutes
2-1/8 - cups powdered sugar
2 teaspoons - root beer extract or regular root beer soda pop, not diet.

Toppings;
1 tablespoon - Grated chocolate, I prefer Ghirardelli milk chocolate.
1 teaspoon - Chocolate sprinkles

Directions;
1. Grease and flour dust two 9" round cake pans.
2. Preheat oven to 350 degrees
3. Mix cake batter ingredients in bowl at medium speed for 2 minutes, exactly.
4. Pour equal amount of the cake batter into the two pans.
5. Place cake pans in over for 30-35 minutes.
6. Mix all of the frosting ingredients into a bowl except the root beer. Blend with mixer until smooth.
7. Remove cakes from oven when finished, make sure they are cooked all the way through with a toothpick.
8. Let the cakes stand until warm, about 15 minutes.
9. Flip each cake, separately,  upside down onto a plate so that each has its flat side facing up on the plates.
10. Turn one of the cake pans upside down and flip one of the cakes onto it, so the is right-side up on an upside down pan.
11. With a long sharp knife, slice the top of the cake, the one thats on top of the pan, so that is level. Be cautious not to slice it down too much. Invert any pieces you slice off and use them as filler to make the top as flat as possible. Use a tiny bit of frosting to hold the pieces in place.
12. Sparingly spread some of the frosting over the sliced top cake. Use just enough to seem the pieces flat.
13. Grate a nice covering of chocolate over the frosting you just spread onto the first cake half, the one on the pan.
14. Flip the second cake, the one on the other plate, over onto the first plate, and then flip it once more onto the top of the frosted and chocolate grated half of cake. This should make it so the flat, bottom, of the second cake is face up and on top of the first cake sitting on the pan.
15. Mix in the root beer extract into the remaining frosting using a mixer.
16. Using a spatula spread some frosting around the sides so as to fill in the seem between the cakes.
17. Scoop out the remaining frosting from the bowl onto the top of the cake.
18. Spread the frosting evenly over the cake.
19. Take some grated chocolate and with a spoon dash it on the sides of the cake, being careful not to get it on the top. The idea is to make it look like root beer in the glass when you make a root beer float.
20. Sprinkle the chocolate sprinkles on top of the cake.
Optionally (as I did); use some icing to write a message on your cake.
